Lots of food production going on in the kitchen at wintergreen...topping up the shelves for opening at Syrup Season (first weekend in March). We have been making BBQ sauces, mustards, and jellies this week.
It is far too cold to be stretching lines in the sugarbush...so our time has been spent in the evaporator room, getting the evaporator set up with all the “rigging” in anticipation for a good syrup run this year.
If you are thinking about ordering your syrup for 2015, now would be a good time to get “in our books”. Production will start hopefully mid March...it's all up to Mother Nature.
